Holiday Cranberry Sauce


Celebrate your holidays with this over-the-top, “Holiday Cranberry Sauce”.  This recipe makes a deliciously fresh cranberry sauce with an amazing combination of flavors coming from cranberry, apple, pear, cherry and orange.  Serve this delicious sauce with your holiday meal, on top of toast, oatmeal, yogurt, “Light Coeur a la Creme” or my, “Best Ever Light Pumpkin Cheesecake”, Yum!

  • ¼ cup water
  • ½ cup fresh squeezed orange juice
  • 1 tablespoon honey
  • ¼ cup brown sugar
  • ¼ cup Splenda, granulated
  • 2 teaspoons orange zest, finely chopped
  • 1 Golden Delicious apple, cored and diced
  • 1 ripe Bosc pear, cored and diced
  • 1 bag (12-ounce) whole fresh cranberries
  • ⅓ cup dried cherries
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger (or 1 teaspoon finely grated fresh ginger root)
  1. Whisk the water, orange juice, brown sugar, Splenda and cinnamon into a large saucepan. Bring mixture to a boil until all sugar is dissolved.
  2. Add in the remaining ingredients and bring to a boil, reduce the heat to medium. Cover with a lid and simmer for about 10 minutes. You will hear the cranberries pop. Remove the lid and mash the mixture with a potato masher. Simmer until the mixture thickens. Remove from heat and cool completely.
  3. Store in the refrigerator.
